▼ Objective: Determine change in eating competence (EC) and factors related to EC in students enrolled in basic nutrition courses at a major private university. Design: Eating competence was measured by administering the ecSatter Inventory (ecSI) both before and after class intervention. Additional data on eating disorder prevalence, food security, and general demographics were also collected in the same structured survey. Significance identified with p value <0.01. Setting/Participants: This survey was administered to 566 students enrolled in basic nutrition courses at a major private university in the western United States. Analysis: ANOVA was used to determine relationships between ecSI end scores and participant characteristics. ANCOVA was used to determine relationships between change in ecSI scores over time and participant characteristics. Results: Enrollment in NDFS 100 is associated with an overall increase in eating competence (EC). However, students with current eating disorders had a significant decrease in EC during enrollment. Current or past eating disorders and low or very low Food Security Status were associated with lack of EC. Females and younger participants were not eating competent at the course end. Enrollment in NDFS 201 was not associated with significant change in EC. Conclusions: Basic nutrition instruction improves EC among students without eating disorders. Low food security status and presence of an eating disorder may be a barrier to improving EC.

▼ Tavoitteet. Syömishäiriöoireilu on yleistä nuoruudessa ja voi hoitamattomana johtaa syömishäiriöihin sekä olla haitaksi nuoren hyvinvoinnille. Vanhemmuuden merkitys psykologiselle kehitykselle on nuoruusiässä suuri ja sen vaikutusta syömishäiriöoireiluun onkin tutkittu, muttei kattavasti. Vain osa tutkimuksista tarkastelee myös diagnoosirajat alittavia oireita ja useimmat tutkimukset ovat käyttäneet vain nuorten raportoimaa tietoa vanhemmuudesta. Lisäksi pitkittäistutkimuksia on tehty vain vähän eikä vanhemmuuskompetenssin kokemusta ole tutkittu riskitekijänä. Tutkimuksen tavoitteena on selvittää lapsuusaikaisen vanhemmuuskäyttäytymisen ja vanhemmuuskompetenssin yhteyttä nuoruuden syömishäiriöoireiluun.
Menetelmät. Tutkimuksessa käytetty aineisto oli peräisin suomalaisesta Glaku-kohorttitutkimuksesta. Yhteensä 121 nuorta, joista 76 oli tyttöjä (62.8%), raportoi syömishäiriöoireitaan 17-vuotiaina. Heidän vanhemmistaan 119 äitiä ja 96 isää oli vastannut kyselyihin vanhemmuudesta lasten ollessa 8-vuotiaita. Vanhempien käyttäytymistä mitattiin Parent Behavior Inventory –kyselyllä (vihamielisyys/supportiivisuus) ja vanhemmuuskompetenssia Parenting Sense of Competence –kyselyllä (pystyvyys/tyytyväisyys). Syömishäiriöoireita mitattiin Eating Disorder Inventory 2 –kyselyllä (laihuustavoittelu/kehotyytymättömys/bulimia). Äitien ja isien vanhemmuustekijöiden yhteyttä syömishäiriöoireisiin tutkittiin käyttäen lineaarista regressioanalyysiä.
Tulokset ja johtopäätökset. Isien vahvempi vanhemmuuskompetenssin kokemus sekä sen alaskaalat tyytyväisyys ja pystyvyys ennustivat nuorilla vähäisempää tyytymättömyyttä kehoon (keskimääräiset efektikoot 0.18–0.26 keskihajontayksikköä, p-arvot < .05). Muut vanhemmuusmuuttujat eivät olleet yhteydessä syömishäiriöoireiluun eikä sukupuoli vaikuttanut vanhemmuuden ja syömishäiriöoireiden väliseen yhteyteen merkitsevästi.
Isien kompetenssin kokemus on mahdollinen suojaava tekijä nuorten syömishäiriöoireilulle, mikä pitäisi ottaa huomioon preventioiden suunnittelussa.
Aims. Eating disorder symptoms are common among adolescents, can lead to full-blown eating disorders and harm adolescent well-being. Parents’ influence on adolescent psychological development is notable but among eating disorder studies it has not been explored sufficiently. Few previous studies have included also subclinical symptoms or been longitudinal and most have used adolescent-reported data on parenting. Further, parenting sense of competence has not been studied as a risk factor. The current study explores whether parenting behavior and sense of competence in childhood predict problematic eating behaviour in adolescence.
Methods. The used data was from a Finnish birth cohort study Glaku. Altogether 121 17-year-old adolescents (76 girls, 62.8%) answered eating behaviour related questions. Their 119 mothers and 96 fathers had answered parenting-related questions when children were 8. ▼ Since Web-based interventions have a significantly high rate of attrition ranging from 99.5% to 77.5%, the researcher employed an instrumental case study approach to understand compliance in a Web-portal. The specific issue for this study was attrition rates and how SCT constructs affected
eating competence. Qualitative data provided ground zero insight to a complex issue that was further understood. To better understand the phenomenon, participants that registered for the 30-day study and the software developer were interviewed. All interviews (n=6) were transcribed and data from the transcriptions were transformed from dialogues, into categories, then themes, and finally into concepts. Five guidelines to keep attrition rates low was the outcome of the data analysis. Having a nation interested in the Internet and at the same time faced with an obesity epidemic seemed to be a good fit for researching a method to promote
eating competence with interactive technology.
Eating competence intertwines four components: (1) attitudes about
eating and the enjoyment of food (2) accepting new food to add variety to your diet (3) being able to eat the right amount of food and (4) being able to manage food through proper planning, storing, preparing, and offering. With the above information extracted from the literature, it was determined, a serious enough problem existed to justify spending time, money and other resources to develop and implement an intervention. The theoretical framework supporting the development of the web portal is the social cognitive theory (SCT). In health promotion, the purpose of the SCT is to help people stay healthy through good self-management of health habits. This dissertation focused on four constructs: self-efficacy, behavioral capabilities, observational learning, and reinforcement to better understand how
eating competence skills were enhanced and attrition rates lowered.

▼ Continuation of unhealthy dietary patterns and related
health outcomes among low-income populations underscores the need
to improve diet quality. Enhancing eating competence (EC), based on
the Satter model of EC (ecSatter), may be one effective method to
reach this goal, but requires substantiation. The objectives of the
research included in this dissertation were to examine the
congruence of ecSatter with the cognitive and affective eating
behaviors of low-income adults and to test the construct validity
of the ecSatter Inventory (ecSI), a self-report measure of EC, with
a low-income population. These objectives were met through three
studies. Study I was a qualitative, exploratory assessment of EC
with 70 low-income adults. Findings suggested that ecSatter
provided a tenable framework for rationalizing participants’
cognitive and affective responses to eating experiences.
Participants who lacked EC were more likely to express negative
thoughts and feelings associated with eating, compared to eating
competent participants. Furthermore, for non-eating competent
participants, weight management played an important role in food
practices. In study II, the ecSI was cognitively tested with 25
low-income women. Interview responses were examined for consistency
between participants’ reasoning processes and researchers’ intended
meaning of survey items. Findings provided a rationale for making
modifications to the ecSI prior to use with low-income adults.
Findings also suggested that the modified items more appropriately
matched the cognitive processes of participants. Scores from the
modified instrument, the ecSatter Inventory for Low Income
(ecSI/LI), correctly categorized participants by level of EC,
supporting the instrument’s validity. Study III was designed to
evaluate psychometric properties of the ecSI/LI with 507 low-income
women. Confirmatory factor analysis validated the ecSI/LI factor
structure. Construct validity was supported by comparison of
ecSI/LI responses to outcomes of validated measures of cognitive
and affective eating behaviors and food preferences and practices.
Findings support the utility of the ecSI/LI to empirically assess
the theoretical construct of EC with low-income women. Findings
from these three studies lay a foundation for future research
regarding EC among low-income groups. Taken together, data suggest
that EC may be a suitable target in interventions designed to
improve diet quality of low-income audiences.

▼ Sverige har många olika kliniker och institutioner som behandlar problem med ätstörningar och behandlingsformerna inom dessa är mycket varierande. Många av dem har lagt fokus på att ge sina patienter individanpassade resurser och ökad kunskap för att utifrån detta lära sig att ta eget ansvar för sitt tillfrisknande. Syftet med denna undersökning är att se på vilket sätt lärprocesser utvecklats och vilken ny personlig kunskap som påverkat tillfrisknandet till ett hälsosammare liv. Undersökningen har inspirerats av en narrativ ansats och metoden som använts är personlig intervju samt intervju via e-post och brev. Genom MHE Kliniken i Mora skickades brev till, sammanlagt, 20 personer som tidigare haft problem med ätstörningar men som nu anses friska efter professionella kriterier. Den personliga intervjun utfördes med en individ som haft kontakt med en behandlingsverksamhet i Gästrikland. För att stärka materialet användes även en publicerad fallstudie i undersökningen. Resultatet av undersökningen visar att deltagarna i studien ansåg att de genom behandlingen fått nya kunskaper och lärt sig nya sätt varpå de kan hantera problem, både genom teoretisk information men även genom att praktiskt prova. De utvecklades till självständiga individer som lärde sig att ta ansvar för sitt eget liv. Utifrån analysen visades att lärandeprocesser förutsätter en personlig anknytning och meningsfullhet för att ny kunskap ska genereras. Genom undersökningen kan slutsatsen dras att det krävs mycket arbete för att stegvis förändra ett ohälsosamt beteende. Genom högre självkänsla, större tillit till sina egna förmågor och en ökad livskompetens är detta dock fullt genomförbart.
In Sweden, there are great numbers of different clinics and institutions for treating eating disorders and the variation of the treatment differs alot. Many of these are focusing on giving their patients individually suited resources and increased knowledge how to get in charge of their own recovery. The aim of this study is to find out how learning is developed and what personal knowledge you need in the struggle of achieving a healthier life. This study was inspired from a narrative point of view and the methods used are face-to-face interview and interview by e-mail and original mail. Through the MHE Clinic, situated at Mora Sweden, mail were sent to 20 individuals who, in the past, had problems with eating disorders. The face-to-face interview was made with one person, who previously, was in contact with a treatment center in the district of Gästrikland. A published casestudy was also used to further strengthen the collected material. The results of the study shows that the participators gathered new knowledge and learned new ways of handling their everyday problems, both by getting theoretical information but also by actually trying it. As higher education becomes more prominent and prevalent across the country and around the world, its presence influences many individuals in multiple different capacities. The emphasis placed on learning within this setting can be employed not only to improve mental attributes but also physical well-being. A majority of campuses are equipped with expertise and resources to enhance physical well-being and elicit health behavior change among both college students and university employees. As the overall health of these populations continues to decline, particularly in the areas of food and nutrition, it is essential to explore current behaviors as well as identify and develop future strategies that promote physical well-being within the campus setting.
Current Behaviors
College Students
A survey comprised of individual validated and reliable instruments was delivered via online survey software (Qualtrics, Provo, UT) and disseminated as a mass email to all students enrolled at a large land-grant university in the Midwest. Scores from each individual instrument were determined to measure eating competence, food/nutrition aptitudes, and dietary intake within the target population. All data analyses were conducted using Statistical Package for Social Sciences software program (IBM SPSS v24). Descriptive statistics, independent samples t-tests, and correlations were completed to assess various demographic variables, eating competence, food/nutrition aptitudes, and dietary intake among college students. Of those who participated, 615 completed the entire survey and were included in data analyses. Participants categorized as eating competent (n=333, 54%) had significantly higher food/nutrition aptitudes (p<0.01) and superior dietary intake (p≤0.03) compared to participants categorized as eating incompetent (n=282, 46%). All correlations between eating competence, aptitudes, and intake were identified as moderate (r=0.23-0.33) and statistically significant (p<0.01). Outcomes from the survey indicate marginal eating competence, food/nutrition aptitudes, and dietary intake among college students. Results also suggest a positive correlation exists between eating competence and other measured aptitudes and intake within the target population. Future research is warranted to further explore the role of eating competence as well as its connections to other food/nutrition aptitudes and dietary intake among college students.

A nutrition education program, Culinary Boot Camp (CBC), was developed and delivered to students at a large land-grant university in the Midwest. ▼ Since the 1950s, epidemiological studies have shown a steady increase in the number of children and adolescents with
eating disorders (American Academy of Pediatrics, 2003). Moreover, Anorexia Nervosa has the highest mortality rate of any mental illness (Sullivan, 1995). Historically,
eating disorders were believed to occur predominantly in Caucasian adolescent and adult females from middle to upper socio-economic status (SES). Presently, studies are beginning to include more diversified samples and are discovering the presence of maladaptive
eating behaviors. The current longitudinal study utilized a large community sample of girls who were assessed at age 9 and again at age 10. Further, the study examined a more racially and economically diverse sample than typically assessed in the
eating disorder literature. First, the study examined the prevalence and stability of body image dissatisfaction and
eating disturbance and whether they vary by racial group or SES. Secondly, the study investigated whether Body Mass Index (BMI) and body image dissatisfaction predict later
eating disturbance. Lastly, the study examined whether social
competence difficulties, feelings of loneliness, and victimization by peers predict later
eating disturbance after controlling for BMI and body image dissatisfaction. Results indicate that 11% of the sample scored in the Anorexic range at age 9 and 7% at age 10. Body image dissatisfaction was endorsed by 35% of the sample at age 9 and 38% at age 10. Further, the frequencies of numerous maladaptive
eating behaviors are reported. Children had higher mean
eating disturbance scores at age 9 than at age 10. Subjects from the Minority group had higher
eating disturbance scores at both ages than the Caucasian group. There was no difference between the SES groups on
eating disturbance or body image dissatisfaction. Finally, BMI, racial group, body image dissatisfaction, social
competence, and victimization by peers were found to be significant predictors of
eating disturbance. Implications of the findings and directions for future research are offered.
