▼ Serum 25-hydroxyvitamin D (25OHD) is considered to be the best biomarker of
vitamin D status. Besides the dietary intake of
vitamin D and exposure to sunlight, there are other factors that affect serum 25OHD such as weight, race, sex, binding protein and the effect of
vitamin D receptor (VDR) and
vitamin D binding protein (DBP) single nucleotide polymorphisms (SNPs) on serum 25OHD levels. | The primary objective of this study was to determine the effect of genotypes based on VDR and DBP SNPs on the dose response to
vitamin D in terms of serum 25OHD and serum parathyroid hormone (PTH). | We used specimens from an ongoing study (ViDOS -
vitamin D supplementation in older subjects) - a double blind randomized placebo-controlled trial that enrolled 160 healthy Caucasian postmenopausal women, with
vitamin D insufficiency (mean serum 25OHD 15.6 ng/ml) recruited during winter and followed for one year. The subjects were randomly assigned to placebo,
vitamin D3 400, 800,1600, 2400, 3200, 4000 or 4800 IU/d and calcium to increase total calcium intake to 1200-1400 mg/day based on 7-day food diaries. The primary outcomes were serum 25OHD and serum parathyroid hormone (PTH) for this study. Serum 25OHD and PTH were measured by immunoassay. Genotype analysis was performed on DNA isolated from peripheral leucocytes from patients. | There was a significant effect of BMI, baseline serum 25OHD and dose of
vitamin D supplementation on final serum 25OHD. However, there was no effect of genotypes based on VDR and DBP SNPs on serum 25OHD at the end of one year after
vitamin D supplementation after adjustment for relevant confounders like age, BMI, baseline serum 25OHD, dose, serum creatinine, smoking status, alcohol intake, caffeine intake and calcium intake. This study represents the first longitudinal placebo controlled randomized trial that examined the pharmacogenetics of
vitamin D metabolism together with a dose response to
vitamin D; these results do not support previous positive association data.

Vitamin D deficiency is prevalent amongst athletes which could affect health, training and performance. Sun safety messages often dominate over
vitamin D education and this is evident when investigating attitudes towards and knowledge of
vitamin D and sun exposure in the general population. Knowledge of and attitudes towards
vitamin D amongst athletes has not previously been researched. Such information is important when designing educational interventions and preventing or treating deficiency. Despite high rates of deficiency in elite athletes, few studies have documented the prevalence of
vitamin D supplement use in this population. This study aimed to investigate: knowledge of
vitamin D, attitudes towards sun exposure and
vitamin D and the prevalence of
vitamin D-containing supplement use in elite athletes.
Design: 110 international-level New Zealand rugby (n=35), hockey (n=22) and rowing (n=55) athletes completed an interview-style questionnaire during summer months (February and March). The questionnaire consisted of 4 sections: Demographics, Knowledge of
vitamin D,
Supplements and Diet and Attitudes to sun exposure and
vitamin D. Chi-squared testing was used to determine differences between gender, ethnicity and sport.
Results: Almost all (97%) athletes had heard of
vitamin D and two-thirds were able to name the sun as a source of
vitamin D. Pacific Islanders were less likely to be able to name the sun as a source compared to Māori or New Zealand (NZ) Europeans (p=0.008). Only 17% of athletes were able to name another source of
vitamin D, less than half (45%) of athletes were able to name a personal characteristic that affects
vitamin D status and 29% could name one or more health benefits of having an adequate
vitamin D status. Rowers tended to know the most about sources and health benefits of
vitamin D. Only 5% of athletes were concerned about their
vitamin D status but 12% intentionally spent time in the sun to improve their
vitamin D. A larger proportion, one-third of athletes intentionally spent time in the sun with intention to tan, and two-thirds were concerned about the risk of skin cancer with sun exposure. Females and hockey players were more likely to spend time in the sun to tan and Pacific Islanders were the least likely to (p<0.05).
Vitamin D, calcium and cod liver oil
supplements were used by 6-7% of athletes and one-third used multivitamins.
Conclusion: Elite athletes’
vitamin D knowledge was limited beyond knowing the sun is a source of
vitamin D. The small proportion of athletes concerned about their
vitamin D status understood more about
vitamin D than those unconcerned, therefore educational interventions are likely to be successful.
Vitamin D intake from food and
supplements was not likely to be adequate to maintain summer status for most athletes. Concern of skin cancer predominated over concern of
vitamin D status. Elite athletes require
vitamin D education in order to improve knowledge of

▼ Two experiments were conducted to investigate the efficacy of different nutritional supplements on productive performance of broilers. Parameters considered included growth rate, feed consumption, feed efficiency, mortality and the economic feasibility of using the commercial supplements. Supplements tested included Chick-A-min, Vita Flash Amino, Vitamino Trace Oral and Amino Vitasol (CM, VFA, VTO and AV) in maize-soybean diets under production. A deficient diet was employed in experiment 1 to determine the efficacy of the supplements in sustaining good performance. In both experiments, the treatment diets consisted of a Control and Diets supplemented with CM, VFA, VTO and AV.
Birds fed commercial supplements in the deficient diet had higher live weights, lower mortality, higher carcass and organ weights (expressed as % of live weight), high feed consumption and FCR (P≤0.05) compared with the control. Supplementation of a basal nutrient low diet was beneficial as it improved the overall performance of broilers and their livability.
On a standard diet, there were no significant differences in mortality among the supplements and the control. No significant differences in intake were observed among the supplements at 28 days of age, but supplements differed significantly from the control (P≤0.05). CM and AV showed better support for good growth and health than other supplements at 42days of age. CM and AV had higher final weights for organs and carcass weights and were significantly different in terms of cost effectiveness with VFA, VTO and the control (P≤0.05).
The better performance of birds and net returns on CM and AV reveals the important influence of composition and quality of nutritional supplements on broiler performance and profitability which parameters are essential to small scale broiler production.
The results of this study revealed that supplements of amino acids, minerals and vitamins had a positive effect on the live weight and feed ultilisation efficiency in comparison to standard diets therefore the use of quality commercial amino acid-mineral-vitamin supplements on maize soybean diets should be encouraged to become a phenomenon for maintenance of normal growth and health in broiler chickens and ultimately improved profitability of the broiler business.

vitamin D
supplements to combat low serum
vitamin D levels, meet physiological needs and prevent diseases.
The purpose of this research was to study the racial, gender, age,
income, and education level differences in the prevalence of
vitamin D supplement intake and mean amount of
vitamin D supplement
taken in the American population from the file, Dietary Supplement
Questionnaire, NHANES 2001-2002, 2003-2004, 2005-2006 data. The
statistical software, SUDDAN was used to control the weights of the
samples. The data of 21,455 participants included
in the sample, 2 years of age and older derived from the surveys
were analyzed in this study to assess
vitamin D supplement intake
by Americans. According to the analysis, 33.7% (n=5,467) of the
respondents reported consuming a
vitamin D supplement. In this
study, a higher percent of
vitamin D supplement takers were females
[37.7%], non-Hispanic whites [38.5%], elderly [53.3% of 71-85
years], college graduates [50%], and household incomes greater than
$65,000 [41.6%]. The lowest percent of
vitamin D supplement takers
were males [29.7%], Mexican-Americans [19.2%], adolescents [16.6%],
people with less than high school education [20.7%], and those with
household incomes less than $20,000 [22.7%]. The
groups that took the highest mean amount of
vitamin D
supplements
were females [413.2 ± 9.7 IU], non-Hispanic whites [391.1 ± 6.8
IU], the elderly [485 ± 16.1 IU], high school graduates [426.4 ±
14.1], and household incomes greater than $65,000 [393 ± 9.5 IU].
The groups who took the least amount of
vitamin D
supplements were
males [359.9 ± 7.1 IU], Mexican-Americans [317.4 ± 9.7 IU], ages
2-5 years [307.4 ± 10.5 IU], less than high school education [378.9
± 23.9 IU], and household incomes less than $20,000 [375.6 ± 14.9
IU]. In conclusion, the American population
groups most likely to take a
vitamin D supplement are women,
elderly, non-Hispanic whites, college graduates, and incomes
>$65,000. The groups most likely to take the highest mean amount
are women, non-Hispanic whites, elderly, high school education, and
incomes >$65,000.

▼ U okviru ove doktorske disertacije razvijene su elektroanalitičke metode za određivanje pojedinih vitamina B grupe. Za određivanje vitamina B1 i B3 primenjena je adsorpciona hronopotenciometrijska striping analiza (AdHSA) na tankoslojnoj živinoj elektrodi kao radnoj elektrodi, dok je za određivanje vitamina B2 primenjena hronopotenciometrijska analiza (HA) na dvema geometrijski različitim elektrodama od staklastog ugljenika: planarnoj disk elektrodi i elektrodi u vidu procesne posude. U cilju optimizacije metoda ispitan je uticaj najznačajnijih eksperimentalnih faktora. Optimalni eksperimentalni uslovi za određivanje vitamina B1 su podrazumevali primenu 0,2 mol/l citratnog pufera vrednosti pH 6 kao pomoćnog elektrolita, potencijala i vremena akumulacije od -1,313 V i 50 s, redom, i struje rastvaranja depozita od 1,9 – 6,1 μA. Odgovarajući eksperimentalni faktori za određivanje vitamina B2 su bili: 0,025 mol/l HCl kao pomoćni elektrolit, inicijalni potencijal od 0,023 V i struja redukcije od 0,8 – 4,2 μA, dok su optimalni radni uslovi za određivanje vitamina B3 obuhvatali primenu 0,05 mol/l citratnog pufera pH 6, potencijala akumulacije od -1,405 V pri vremenu akumulacije od 15 s, i struji rastvaranja u intervalu od 1,4 – 15,1 μA. U slučaju određivanja vitamina B2 primenom radne elektrode u vidu procesne posude ispitan je i uticaj aktivne površine radne elektrode na analitički signal vitamina B2. Optimalna vrednost aktivne površine radne elektrode iznosila je 13,4 cm2. Pod optimalnim eksperimentalnim uslovima, dolazilo je do elektrooksidacije molekula vitamina B1 i B3 na tankoslojnoj živinoj elektrodi u analitičkom koraku, dok se vitamin B2 redukovao na elektrodama od staklastog ugljenika. U okviru validacije metoda definisani su opsezi linearnosti, određene su vrednosti granice detekcije i granice kvantitativnog određivanja, ocenjena je preciznost i ispitane su interferencije. Uz odgovarajuće uslove rada, dobijena je dobra linearnost analitičkog signala od sadržaja za sva tri ispitivana vitamina. Ostvarene su granice detekcije od 1,64 mg/l za vitamin B1, 0,076 mg/l za vitamin B2 uz primenu planarne disk elektrode i 0,018 mg/l (vitamin B2) uz primenu procesne posude od staklastog ugljenika kao radne elektrode. Ostvarena granica detekcije za vitamin B3 je iznosila 2,20 mg/l. Nakon optimizacije i validacije, razvijene metode HA i AdHSA primenjene su za određivanje vitamina B1, B2 i B3 u komercijalnim multivitaminskim dodacima ishrani i multivitaminskim instant napicima. Tačnost razvijenih metoda je potvrđena paralelnim analizama izvedenim primenom visokopritisne tečne hromatografije.

▼ Les compléments alimentaires sont de plus en plus consommés en France depuis le début des années 2000. Cependant, l’effet de la prise de compléments alimentaires sur la santé, notamment à long terme, n’est pas clairement établi. Les compléments en vitamine D et en vitamine C font partie des compléments les plus consommés en France, et à des doses généralement beaucoup plus élevées que celles apportées par l’alimentation. Plusieurs études expérimentales suggèrent que la vitamine D et la vitamine C pourraient avoir une influence sur le risque de cancer du sein, le cancer actuellement le plus fréquent chez la femme dans le monde. Cependant, les études épidémiologiques disponibles ne permettent pas de conclure sur cette relation. L’objectif de cette thèse était d’étudier la relation entre prise de complément en vitamine D ou vitamine C et risque de cancer du sein dans la cohorte E3N à partir de données répétées sur la prise de complément alimentaire, et d’étudier si cette relation pourrait être influencée par l’ancienneté de la prise de complément alimentaire et par de potentielles interactions avec certains facteurs spécifiques liés au mode de vie. La prise de compléments alimentaires a été estimée à partir de plus de 55 000 femmes ménopausées de la cohorte E3N suivies entre 1995 et 2008. Nous avons observé que le prise de complément en vitamine D pourrait réduire l’augmentation de risque de cancer du sein associée à la prise de traitement hormonal de la ménopause, mais pourrait être délétère chez les femmes n’ayant jamais utilisé de traitement hormonal de la ménopause et n’étant pas en surpoids, et donc étant peu exposées aux hormones. Concernant la prise de complément en vitamine C, nous avons observé une augmentation de risque chez les femmes ayant déjà des apports alimentaires en vitamine C élevés. Nos résultats ont un impact potentiel en termes de santé publique, mais devront d’abord être confirmés par des études ayant des données répétées et quantitatives sur la prise de compléments alimentaires. Cependant, ces résultats appellent à la prudence quant à l’utilisation de compléments alimentaires tels que la vitamine C en l’absence de déficience nutritionnelle avérée.
The use of dietary supplements has been steadily increasing since the early 2000s. However, little is known on the effect, especially the long-term effect, of dietary supplement use on health. Single vitamin D and vitamin C supplements are widely consumed in France, at doses that generally largely exceed dietary intakes. Experimental studies have suggested potential effects of vitamin D and vitamin C on breast cancer risk, the currently most common cancer in women worldwide. ▼ This study characterizes B vitamin supplement use prior to and during pregnancy, changes in dietary one-carbon nutrient intakes (folate, vitamin B12, vitamin B6, choline, betaine and methionine) and most significant dietary sources. In Canadian women (Toronto, Ontario) supplemental (n=364) and dietary intakes (using a food frequency questionnaire) (n=290) were assessed during early and late pregnancy. Majority reported using a B vitamin-containing supplement prior (60%) to and during early (93%) and late (89%) pregnancy. Median supplemental intakes of folic acid, B12 and B6 were 1000 µg/d, 2.6 µg/d and 1.9 mg/d, respectively. Dietary one-carbon nutrient intakes did not change appreciably between early and late pregnancy. Most significant sources of folate and B6 were fruits and vegetables, of folic acid were cereals and grains and of B12 were dairy and egg products. Overall, this study provides novel information about one-carbon nutrient intakes in pregnancy which are crucial in maternal and child health.

▼ Vitamin B12 is important for various processes in the human body including DNA synthesis, red blood cell production, energy production, fatty acid synthesis, and for the conversion of homocysteine into methionine.
Vitamin B12 deficiency is becoming more prevalent. The purpose of this study was to evaluate if a different route of administration, i.e. nebulization, was a viable option for increasing serum levels of
vitamin B12 in both exercisers and non-exercisers. The increasing number of people that are
vitamin B12 deficient is due to several factors including medication use, elective gastric bypass surgery, and an increasing elderly population. There are currently two common ways to treat an individual who is deficient in
vitamin B12; daily oral supplementation or intramuscular injection of
vitamin B12. For this study, participants were placed in one of four groups (non-exercise oral B12, non-exercise nebulized B12, exercise oral B12, and exercise nebulized B12) and received either 28 consecutive days of oral B12 supplementation or once-weekly nebulized B12 treatments for four consecutive weeks. Repeated measures ANOVA indicated there was no significant time by group interaction (F[1,33] = 2.352, p = .135) or time by exercise interaction (F[1,33] = 3.013, p = .087). Also, there were no significant differences for the time by group by exercise interaction (F[1,33] = 1.472, p = .234). Although statistical significance was not achieved, nebulizing
vitamin B12 did increase serum B12 levels more than oral supplementation, and is a viable option for increasing serum B12 levels. Investigating other populations such as the elderly, vegetarians, or individuals taking medications that impair with the absorption of
vitamin B12 may be beneficial to determine if similar increases in serum B12 levels is expected in such populations.

▼ Vitamin D, a pleiotropic hormone essential for calcium homeostasis, has generated widespread interest due to associations with numerous health outcomes. Cross-sectional studies of
vitamin D and lung function reported strong, positive associations, but representative, longitudinal population-based studies are lacking, and biological mechanisms are unclear. Lung function decline is the primary characteristic of chronic obstructive pulmonary disease (COPD), the 3rd leading cause of mortality in the United States; given limited treatments to delay progression, identifying preventative approaches is critical. This work aims to elucidate determinants of
vitamin D status, and investigate the role of
vitamin D as a determinant of lung function. First, we explored genetic and non-genetic determinants of serum
vitamin D [25(OH)D] in African Americans. Approximately 25% of 25(OH)D variability was explained by non-genetic factors, and multivitamin supplement use was the strongest predictor. A single nucleotide polymorphism (SNP) in the
vitamin D binding protein modified the effect of multivitamin supplement use on 25(OH)D. About 23% of 25(OH)D variability was estimated to be attributable to genetic variation, with replication in a separate cohort. However, the influence of genetic ancestry made an exact estimate impossible; further exploration of genetic determinants of 25(OH)D in African Americans is needed. Second, potential mechanisms for
vitamin D-lung health associations were explored through a cross-sectional study of SNPs in 13 candidate
vitamin Dresponsive genes. SNPs in SGPP2, a phosphatase in the sphingosine-1-phosphate signaling pathway, were associated with lung function and COPD risk. Further, we identified an association between SNPs in SGPP2 and lung-tissue specific expression of SGPP2. While specific mechanisms remain to be investigated, SGPP2 is a promising
vitamin D-responsive candidate gene. Finally, associations between variants in
vitamin D metabolic genes, serum 25(OH)D and lung function were explored in the Framingham Heart Study. SNPs in four
vitamin D metabolic genes were associated with rate of change in FEV1, but there was no association between 25(OH)D and rate of change in FEV1 in the Third Generation cohort, a group of largely
vitamin D sufficient middleaged adults. Future studies should consider the influence of baseline nutritional status and underlying genetic variation on
vitamin D-disease associations.

▼ This thesis explores the history of healthy eating in the mid-to-late twentieth century, providing insight into the roots of contemporary anxieties about healthy lifestyles, dieting, and the prevention of chronic disease in the UK and the US. This thesis argues that during the post-war decades, British and American societies experienced a fundamental shift that enabled new forms of cultural preoccupations about health and diet to flourish. This shift created an obsession within the media, science and society about safeguarding good health, youth and vitality, especially through dieting, specific foods, and the ingestion of supplements. This shift was enabled by the simultaneous promotion and representation of healthy eating as a solution to chronic diseases, by neoromantic notions of health, by anxieties about modern living, but also by the growth of ideas around individual agency and responsibility for health. Drawing on a rich source base of self-help books, newspapers and magazines, advertisements, medical journals and comic books, chapters of this thesis explore the ways in which contemporary obsessions about diet and health were promoted, reported on and experienced in everyday life. Examining health obsessions in relation to gendered approaches to food and broader post-war concerns about the impact of modernity on health and lifestyle, on the valorisation of slim bodies and youth, and on chronic disease prevention and productivity, this thesis offers new perspectives on the multifaceted interactions between self-help advice literature, newspapers and magazines, mainstream medical thought, and comic books during the postwar decades.

vitamin D deficient. 1 Although scientific and public awareness about
vitamin D deficiency's role in health has increased in recent years, current data are not available to assess whether there have been concomitant increases of supplementation among women of childbearing age. Methods: We assessed prevalence and significant associations of
vitamin D supplementation among childbearing-age women (16-49 years) in the most recently available National Health And Nutrition Examination Survey (NHANES) dataset (2007-2008). We examined prevalence of
vitamin D supplementation in stratified demographic (age, race/ethnic), socioeconomic (education, income, food security, health insurance, years in U.S.) and health (BMI, waist circumference, exercise, diabetes, weight-loss attempts, parity/breastfeeding) subgroups to determine disparities in supplementation. Logistic regression models (both unadjusted and adjusted) were used to examine associations between
Vitamin D supplementation and these variables. Sampling weights were applied to account for the complex survey design and ensure generalizability to women of childbearing age among the non-institutionalized population in the US. 2 Analyses were conducted using Stata versions 11 and 12 (College Station, TX). Results:Of 1749 women, 459 (33%) had taken
supplements containing
vitamin D during the past 30 days. We observed low supplementation prevalence (range 12%-27%) among teenagers, those with high body mass index (BMI), low socio-economic status (low-income, low education, ethnicity other than white, food insecurity, or no/government insurance), as well as parous women who had never breastfed, and women with no history of vigorous or moderate exercise. In the fully adjusted regression models, Mexican-American race/ethnic identity (OR: .53, 95% CI .33-.86), low food security (OR: .65, 95% CI .44-.95), no health insurance (OR .65, 95% CI .42-1.00), government/other health insurance (OR: .66, 95% CI .45-.96), and parity without breastfeeding (OR: .63, 95% CI .40-.99) were associated with lower likelihood of
vitamin D supplement use compared with the reference groups. Conclusions: Disparities in
vitamin D supplementation parallel and may exacerbate disparities in nutrition and health. Supplementation rates may reflect inequalities. Findings should influence public health practice and advocacy.

Vitamin insufficiency and deficiency may be associated with increased risk for cardiovascular disease, diabetes, some cancers and all cause mortality. Practice guidelines define sufficient
vitamin D status as a serum 25-hydroxycholecalciferol (25-OHD) concentration >30 ng/mL (70 nmol/L). Supplementation strategies to safely achieve
vitamin D sufficiency are needed. Objective: We evaluated the change in serum 25-OHD concentrations after supplementation with three commercially available
vitamin D3 products with different vehicles of delivery: a chewable tablet; a liquid drop; and a encapsulated powder. Methods: The clinical trial design was a prospective, randomized, pragmatic, comparative effectiveness study of
vitamin D3 supplementation. We conducted third-party analysis of the three commercially available
vitamin D3
supplements used in this trial. Subjects were provisioned informed consent and randomized to one of the three
vitamin D3
supplements, dosed at 10,000 IU per day for 12 weeks, per label claim. Results: Eligible subjects (n=66) were enrolled in the study, of which 11 subjects were lost to follow up (17%). 100% of the subjects in the tablet and capsule allocation arms attained sufficient
vitamin D status, compared to 80% in the oil drop arm. The mean (±SD) change in 25-OHD (ng/mL) from baseline to week 12 reached the level of statistical significance (p<0.001) for each of the three allocation groups: tablet (n=18); 31.8 (7.6); oil drop (n=20); 32.2 (8.0); and capsule (n=17); 48.1 (8.1). Between group changes in serum 25-OHD were also significant (ANOVA; p<0.05). While pairwise-comparisons of changes in serum 25-OHD showed a statistically significant difference, distinguishing Group C from Groups A and B (Tukey's Test; p<0.05). Three non-serious adverse events occurred during the study, without observed hypercalcemia or hypervitaminosis D. Discussion: We observed variability in
vitamin D3 concentration in the three
supplements, with the tablet and capsule showing increased D3 concentration, compared to label claim. The majority of subjects (93%) achieved sufficient 25-OHD status at the end of the study. We conclude that 10,000 IU
vitamin D3 per day for 12-weeks may be a safe and effective strategy for
vitamin D supplementation to correct nutritional deficiency in 25-OHD insufficient populations. This trial was registered at clinicaltrials.gov as NCT01524874.

affects 127 million people globally, leading to increased risk of
infection, ocular disorders, and/or impaired growth (WHO 2004).
There are multiple ways to increase vitamin A intake including
supplements, whole, fortified, and biofortified foods. Given that
it may be in policymakers’ best interests to increase the vitamin A
intake of individuals and households, understanding preferences for
food or pill-based vehicles could be important. Preferences of
Indian consumers (n = 120) and Canadian consumers (n = 102) were
compared. Although extremely disparate population samples, data has
indicated that vitamin A deficiency exists in both countries
(Kirkpatrick and Tarasuk 2008; Wallace 2012). The objectives of
this study were threefold: 1) to estimate the individual’s
preferences for different vitamin A vehicles by their willingness
to exchange supplements for vitamin A rich foods, 2) to examine the
impact of perceptions of naturalness, knowledge of nutrition and
diet, and food technology neophobia on Vitamin A vehicle
preferences, and finally, 3) to compare the subsamples within
Odisha, India and Edmonton, Alberta, Canada and identify common
preference indicators that may be similar, suggesting factors that
might be population independent and worth further investigation in
recommending programs in vitamin A deficient populations elsewhere.
A consumer choice experiment with a modified payment card was used
to analyze the probability that individuals would exchange a food
for supplements with which they were endowed. This allowed the
calculation of willingness to pay (WTP) for different sources of
vitamin A. These food-based sources included biofortified sweet
potato (Meenakshi et al 2012), fortified edible oils (margarine in
Canada), and carrots. Each of the food bundles satisfied seven days
of recommended vitamin A intake. This way, participants could
better understand what the equivalences were in terms of foods
versus pills for vitamin A content. A survey was then administered
to identify perceptions for naturalness, nutrition knowledge, and
food technology neophobia of participants. These attitudes and
perceptions were scored based on methods in the literature.
Multinomial logit and random parameters logit regressions were used
to estimate probabilities of exchanging each of the vitamin A rich
goods within the choice set for vitamin A supplements. From the
parameter estimates, the mean WTP to exchange supplements for
fortified oil (or margarine in Canada), carrots, and biofortified
sweet potato were calculated for the Indian and Canadian
subsamples. Further, mean WTP to exchange supplements for a food
was compared between participants with higher and lower scores for
the three attitude measures. Results indicated that Indian
participants with high confidence in their knowledge of nutrition
and diet were willing to pay significantly less for fortified oil,
carrots, or biofortified sweet potato compared to participants with

▼ Os programas de reabilitação pulmonar (RP) já são bem definidos e estabelecidos
na literatura mundial, na melhora da função cardiovascular e muscular, otimizando a
realização das atividades de vida diárias. Porém os benefícios associados à
suplementação de fatores ergogênicos ou vitamínicos, como a vitamina B12, ainda
são pouco estudados na população com doença pulmonar obstrutiva crônica
(DPOC).O objetivo deste estudo foi verificar o efeito no desempenho aeróbio da
suplementação duplo-cega de vitamina B12 na RP por 8 semanas em portadores de
DPOC, estádios III e IV. Avaliados 32 pacientes com DPOC, divididos em 4 grupos
de 8 participantes cada, todos submetidos à avaliação funcional completa, análises
sanguíneas, além de teste de exercício cardiopulmonar (TECP) incremental pré
intervenção e dois TECP de carga constante (pré e pós) para avaliação de
endurance (Tlim) e comportamento cinético do VO2 (tau e tempo de resposta média).
A RP foi executada por 8 semanas, com 3 sessões semanais de aproximadamente
40 minutos de duração.Conforme randomização foi oferecida suplementação de
vitamina B12 ou placebo (maltodextrina). A análise estatística foi realizada através
de teste pareado intragrupo e análise de variância de uma e de três vias para
observação de interação entre fatores. Verificado aumento do Tlim com a
suplementação de vitamina B12 e exercício (p=0,04) e aceleração do tempo de
resposta média (MRT) com suplementação de vitamina B12 e exercício próximo da
significância estatística (p=0,07). Também houve melhora do comportamento
cinético do VO2 (tau) na avaliação da interação com o exercício (p=0,008). Os
achados indicam a necessidade de mais estudos sobre os efeitos da suplementação
de vitamina B12 associada à RP na melhora do desempenho aeróbio e tolerância ao
exercício no paciente com DPOC.

Psychological stress refers to an individual’s interaction with what he perceives as adverse or threatening phenomena of the external environment (stimulus) and the ensuing physiological response that occurs within the body. Although the stimulus itself may not be harmful, the physiological reaction of the individual to the perceived threat may lead to health consequences. University students may experience greater levels of stress than the average population. They may also experience symptoms of anxiety, irritability, sleep disturbances and impaired memory due to psychological stress. These symptoms may be exacerbated by concomitant use of alcohol and stimulants such as nicotine and caffeine, which students may use as coping mechanisms. Conventional treatment for stress might include anti-depressants and anxiolytics that often have adverse effects. TranQuin® Day Formula is a combination vitamin and herbal supplement formulated to assist the body to cope with stress. Although each individual vitamin and herbal constituent of TranQuin® Day Formula has been thoroughly researched, to date, no research has been conducted on the efficacy of TranQuin® Day Formula dietary supplement for the treatment of psychological stress in university students. The aim of this study was to determine the efficacy of TranQuin® Day Formula supplement on psychological stress in university students, with the use of the Cohen’s Perceived Stress Scale-10 (PSS-10) and Goldberg’s General Health Questionnaire-28 (GHQ-28). Thirty participants, both male and female, between the ages of 18 and 49 years, who obtained a minimum score of 10 on the Cohen’s Perceived Stress Scale-10, were selected to participate in this six week, double-blind, placebo-controlled study. Participants were also requested to complete Goldberg’s General Health Questionnaire-28. The scores obtained by the participants on both stress scales were measured at the beginning of the study (week 0) to obtain a baseline score, in the middle of the study (week 3) and at the end of the study (week 6). The participants were randomly divided into the control and experimental groups. Participants were asked to take two capsules of the supplement or placebo, preferably in the morning after breakfast, or the first meal of the day, for the duration of the study period (6 weeks). Each participant received a daily data sheet which recorded capsules taken and any symptoms experienced, as well as any other medication taken. The results of the study were statistically analysed using the Mann-Whitney-U Test, the Shapiro-Wilk Test, the Wilcoxon Signed Ranks Test, Friedman Test and descriptive statistics.

▼ Weaning stress in young calves is often compounded with stress from transport, marketing, and commingling. The result is a weakened immune system, which can lead to increased incidence of diseases, especially bovine respiratory disease complex (BRDC). Backgrounding cattle post-weaning and prior to feedlot entry may alleviate some of the more common stresses and typically diminished feed intake. Five trials were conducted with a total of 228 weaned calves to evaluate different backgrounding systems. Drylot diets with 70:30 and 40:60 forage to concentrate total mixed rations with Se and
vitamin E injections were studied. No differences were observed in daily gains or feed efficiency among treatments. Steers receiving Se injections had higher (P < 0.05) blood Se concentrations on d 7, 14, 28, and 42. Steers grazed four types of stockpiled pastures with previous pasture treatments: control, poultry litter fed to previous grazing cattle, poultry litter applied, and inorganic fertilizer.
Supplements (16% CP) for each pasture treatment were none, soy hulls + SBM (0.5% BW), and corn + SBM (0.5% BW). On d 7, unsupplemented steers had higher (P < 0.05) daily gains than steers supplemented with corn + SBM. No differences were detected on any other day. Heifers grazed stockpiled fescue and were fed three 16% CP
supplements: corn gluten feed + soy hulls (0.5% BW), corn gluten feed + soy hulls (1.0% BW), and soy hulls + SBM (0.5% BW). On d 14, heifers supplemented with soy hulls + SBM had higher (P < 0.05) cumulative daily gains. No other differences were detected in gains among treatments. Steers were allotted to four injection treatments: none, Se,
vitamin E, and combination of Se and
vitamin E. There were no differences in daily gain or blood Se concentrations on any day among all treatments. Steers grazed two pasture types: fescue and fescue + alfalfa, with the following injections: none,
vitamin E, and Se. There were no differences in daily gains among all treatments. On d 7, 14, 28, and 42, steers receiving Se injections had higher (P < 0.05) blood Se concentrations. On d 7 and 14, steers grazing fescue pastures had higher serum alpha-tocopherol concentrations than steers grazing fescue + alfalfa pastures. There were no differences in serum alpha-tocopherol concentrations due to injection treatment on any day. No consistent differences were detected in forage and blood serum mineral concentrations in all trials. There were no differences in gains from by-product supplementation versus â traditionalâ corn-based supplementation, suggesting that by-product feedstuffs may be of value for backgrounding rations. Selenium and
vitamin E supplementation did not have any significant effect on calf morbidity.

often negative consequences for the health of dairy cows have been observed.
Parturient paresis belongs in the milk economy to the most frequent peripartal
disease. At begin of lactation, dairy cows are not able to cover the sudden
and high requirement of calcium with physiological homeostatic mechanisms of
the body. The negative economic consequences of parturient paresis led to many
attempts to develop a successful prophylaxis of this disease. One option is
the supplementation with
vitamin D or its metabolites, which are decisive for
the regulation of Ca-metabolism. However,
vitamin D or its metabolites can
only be used, if a counter-regulation can be avoided by application of the
right dose and the right length of time. It was therefore the intention of the
present study to optimize the dose and the duration of supplementation with
25(OH)D3. In experiment 1 cows were supplemented with 0.5-, 1.0- or 2.0 mg
25(OH)D3 per day 3 weeks before expected time of parturition (until
parturition). In experiment 2 cows were supplemented with 1.0-, 2.0- or 4.0 mg
25(OH)D3 per day 1 week before expected time of parturition for a maximum of 7
days. The following results were obtained: a) The concentration of 25(OH)D3 in
the blood rose according to the dose and time of supplementation. b) The
concentration of 1,25(OH)2D3 in the blood did not change before parturition.
c) The concentrations of Ca, Mg and P in the blood were not influenced by the
supplementation before parturition. d) The concentrations of Ca and
1,25(OH)2D3 showed dose-dependent [25(OH)D3], but not significant changes in
the peripartal period. e) Clinical treatment with Ca-infusions in experiment 1
increased with the dose of 25(OH)D3 (0.5-, 1.0- and 2.0 mg). These
observations allow the preliminary conclusion, that in spite of unchanged Ca-
and 1,25(OH)2D3 – concentrations in the blood before parturition a
predisposition was induced, which impairs a rapid regulation of the Ca-
homeostasis during time of parturition. It is suggested, that the long time of
supplementation is the major cause of this impairment. f) The experimental
design of experiment 2 (1.0-, 2.0- and 4.0 mg for 7 days) tried to avoid this
possible complication. The obtained results support the conclusion, that the
reduced length of supplementation improved the regulation of Ca-homeostasis
around parturition. However, the number of cows in each group (à 12) does not
allow statements about a successful prophylaxis of milk fever. g) It was not
clear, why the postpartal increase of 1,25(OH)2D3 in both experiments was
almost the same in all groups, in spite of increasing concentrations of
25(OH)D3. These findings permit the conclusion, that the application of 1.0 mg
25(OH)D3 per day and cow for 1 week does not change the increase of
1,25(OH)2D3 production p.p. negatively. The induction of a counter regulation
did obviously not occur as it has been always observed in previous studies.

▼ Izhodišča: Vitamin D je v maščobah topen vitamin, katerega pomanjkanje v nosečnosti povezujejo z različnimi zapleti v nosečnosti in boleznimi pri novorojenčku. V mariborski regiji še ni bilo raziskave, ki bi ugotavljala koncentracijo vitamina D pri nosečnicah in novorojenčkih. Namen raziskave je bil ugotoviti povprečne koncentracije vitamina D pri nosečnicah in novorojenčkih, pogostnost pomanjkanja vitamina D, dejavnike, ki vplivajo na koncentracjo vitamina D pri nosečnicah in novorojenčkih, in vpliv koncentracije vitamina D na pojav zapletov pri nosečnici in novorojenčku.
Bolniki in metode: Opravili smo prospektivno opazovalno raziskavo na 400 nosečnicah in njihovih novorojenčkih v štirih različnih letnih časih. Izbrani meseci so bili na koncu vsakega izmed letnih časov. Mesec september je predstavljal poletno skupino, december jesensko, marec zimsko in junij pomladno skupino. V raziskavo smo vključili nosečnice kavkazijske rase, ki so živele na širšem področju Maribora in so podpisale osveščen pristanek. Iz anketnih vprašalnikov smo pridobili podatke o prehrani in izpostavljenosti soncu v nosečnosti. Iz zdravstvene dokumentacije smo pridobili podatke o zdravstvenem stanju nosečnice pred in med nosečnostjo, podatke o zapletih v nosečnosti in načinu poroda ter podatke o zdravstvenem stanju novorojenčka. Vzorec krvi nosečnice smo odvzeli tekom hospitalizacije, vendar ne kasneje kot dva dni po porodu. Odvzem vzorca krvi iz popkovnice smo opravili takoj po prekinitvi popkovnice po porodu. Koncentracije vitamina D smo razdelili glede na priporočila iz literature: > 80 nmol/L – zadostne koncentracije, 50‒80 nmol/L – nezadostne koncentracije, 25‒50 nmol/L – pomanjkanje in < 25 nmol/L – hudo pomanjkanje vitamina D.
Rezultati: Povprečna koncentracija vitamina D pri nosečnicah v vseh štirih skupinah je bila 43,7 ± 23,8 nmol/L. 23,6 % nosečnic je imelo hudo pomanjkanje vitamina D, 41,5 % jih je imelo pomanjkanje vitamina D, 27,9 % jih je imelo nezadostne koncentracije vitamina D. Zadostne koncentracije vitamina D smo izmerili pri 7,0 % nosečnic. Povprečna koncentracija vitamina D pri novorojenčkih je bila 55,2 ± 30,9 nmol/L. Pri analizi vpliva posameznih dejavnikov na koncentracijo vitamina D pri nosečnicah so se kot pomembni pokazali letni čas (F = 33,979
p < 0,001), trajanje sončnega obsevanja 30 dni pred porodom (r = 0,371, p < 0,001), povprečna temperatura 30 dni pred porodom (r = 0,401, p < 0,001), uživanje rib (t = 2,183
p = 0,030), količina rib na obrok (F = 3,131
p = 0,026), uživanje prehranskih nadomestkov z dodanim vitaminom D (t = ‒4,271
p < 0,001), pogostnost sončenja (F = 3,144
p = 0,025) in trajanje ene epizode sončenja (F = 3,719
p = 0,012). Izmed omenjenih dejavnikov sta v multivariatni analizi statistično značilnost ohranila trajanje ene epizode sončenja (β = 0,185
p = 0,031) in jemanje prehranskih nadomestkov z dodanim vitaminom D (β = ‒0,098

▼ A solid-phase extraction (SPE) method was developed for separation and quantification of
vitamin A (retinol, beta-carotene, retinyl-palmitate, retinyl-acetate),
vitamin D (D2, D3),
vitamin E (alpha,beta,gamma,delta tocopherols, tocopheryl-acetate), and
vitamin K (K1, K2, K3) from different food matrices. The polarities of all fourteen fat-soluble vitamins (FSVs) were determined and chemical properties of many different organic solvents were studied. Quantification was conducted using liquid chromatography-mass spectrometry (LC-MS). All fourteen fat-soluble vitamins were found to be non-polar in nature; beta-carotene was found to be the most non-polar
vitamin in the group, followed by
vitamin esters. Tocopherols, ketones (vitamins K1, K2, K3), and alcohols (vitamins D2, D3, and retinol) were found to be relatively more polar. All fourteen forms were soluble in dimethyl sulfoxide (DMSO) and were thus extracted with DMSO and methanol from food matrices.
To determine the recoveries of known concentrations of
vitamin standards methanol and water were found to be suitable polar solvents for conditioning of the SPE column. Hexane was used for elution. This methodology was further applied to separate fourteen forms of FSVs from food matrices. 80-100% recoveries of FSVs were observed after SPE of provitamin samples (containing 2-3 ingredients). Poor recoveries of FSVs were observed after SPE of complex food samples such as multivitamin capsules,
vitamin fortified drink mixes, and chewable nutrition tablets, which consisted of many different ingredients with varying polarities. The presence of other ingredients interfered with the SPE process leading to the elution of other compounds in the hexane solution along with FSVs.
Repeated measures ANOVA compared means of total FSVs after SPE and total FSVs from food labels. No significant differences were observed in the means (p < 0.05). A strong reliability (alpha>0.9) was observed between the three SPE extractions from each food sample. This SPE methodology can therefore be used for consistent and efficient separation of FSVs from products which do not have compounds that interfere with the extraction process.

▼ Uvod: Hepatička osteodistrofija je termin koji obuhvata metaboličke bolesti kosti udružene sa hroničnim bolestima jetre. U alkoholnoj cirozi (AC) jetre postoji visoka zastupljenost deficijencije vitamina D proporcionalna stepenu disfunkcije jetre, ali njena uloga u patogenezi hepatičke osteodistrofije nije dovoljno objašnjena. Nivo 25(OH)D odražava status vitamina D. Kod AC jetre izmenjena je metabolička aktivnost kosti i suprimirano je formiranje kosti što dovodi do smanjenja koštane mase. U centru interesovanja je postizanje optimalnog statusa vitamina D. Stavovi o suplementaciji vitaminom D kod AC jetre nisu jasno definisani. Cilj rada: Utvrditi nivo vitamina D, ispitati metaboličku aktivnost kosti i mineralnu gustinu kosti kod bolesnika sa AC jetre. Utvrditi efekte suplementacije sa 1000 IU vitamina D3 na dan tokom godinu dana u odnosu na metaboličku aktivnost kosti i mineralnu gustinu kosti kod ispitivanih bolesnika. Bolesnici i metode: Istraživanje je sprovedeno na Klinici za gastroenterologiju i hepatologiju Kliničkog centra Vojvodine u Novom Sadu kao prospektivna intervencijska studija sa primenom suplementacije sa 1000 IU vitamina D3 na dan kod bolesnika sa AC jetre. Grupu bolesnika koja je uključena u istraživanje (1) činilo je 70 bolesnika muškog pola sa dijagnozom AC jetre. Bolesnici su imali četiri pregleda (P), odnosno tačke studije: P1-uključivanje bolesnika i započinjanje suplementacije vitaminom D; P2, P3 i P4 posle tri, šest i dvanaest meseci suplementacije vitaminom D, redom. Prilikom svakog pregleda rađene su analize funkcije jetre, metabolizma kosti i statusa vitamina D. Na početku (P1) i na kraju istraživanja (P4) vršeno je merenje mineralne gustine kosti (BMD) DXA metodom. Gubitak bolesnika od P1 do P4 bio je dvadeset, na različitim tačkama studije. Prvi deo istraživanja odnosi se na Grupu bolesnika koja je uključena u istraživanje (1) i završila prvi pregled (P1). Pedeset bolesnika je završilo kompletno istraživanje po predviđenom protokolu i oni se zbog realizacije svih pregleda i ponovljenih merenja posmatraju kao: Grupa bolesnika koja je završila istraživanje (2). Rezultati: (1): Kod bolesnika sa AC jetre utvrđena je deficijencija vitamina D, snižen nivo osteokalcina, normalni nivoi CrossLapsa, PTH, ukupnog i jonizovanog kalcijuma, fosfora i magnezijuma. Osteopeniju je imalo 42,65% a osteoporozu 14,71% ispitanika. Kod svih ispitanika najniži BMD izmeren je na vratu femura. (2): Suplementacija vitaminom D dovela je do značajnog porasta 25(OH)D. U odnosu na osteokalcin konstatovana je pozitivna razlika vrednosti P1/P4, iako je nivo ostao ispod donje granice normale. Kod nivoa CrossLapsa i PTH razlika P1/P4 je negativna, ali su nivoi u sva četiri merenja u okviru referentnih vrednosti. Na lumbalnoj kičmi došlo je do poboljšanja BMD za 0.87%, a pogoršanja su na vratu femura -1.87 % i kuku -1.65%. Konstatovano je i poboljšanje funkcije jetre. ▼ Zastupljenost deficita vitamina D3 je mnogo veći kod bolesnika sa dijabetesnom bolesti tipa 2 nego u populaciji zdravih osoba. Bolesnici sa DM tipa 2 i deficitom vitamina D3 imaju veći rizik za razvoj dijabetesne nefropatije. Eksperimenti na životinjama i neka klinička istraživanja ukazuju da bi primena nižih doza vitamina D3 mogla imati renoproktektivno delovanje. Cilj istraživanja je bio da se utvrdi zastupljenost deficita vitamina D3 u populaciji bolesnika sa dijabetesnom nefropatijom koja je definisana proteinurijom ˃0,150 g/du. Drugi cilj je bio da se utvrdi da li primena holekaciferola u dozi koja predstavlja razliku između utvrđenog i optimalnog nivoa vitamina D3 dovodi do statistički značajnog smanjenja proteinurije. Bolesnici sa dijabetesom tipa 2 i proteinurijom ˃0,150 g/du su uključivani u skrining na nivo vitamina D3 (25(OH)D) nakon čega su svrstavani u grupe sa deficitom i normalnim nivoom vitamina D3. Granična vrednost za utvrđivanje deficita vitamina D3 je odreĎivana na osnovu tabele koja definiše ove vrednosti za svaki mesec tokom godine, posebno za muškarce i žene. Bolesnici sa deficitom vitamina D3 su podeljeni u 2 grupe od po 45 ispitanika. Studijska grupa je primala holekaciferol u dozi koja je izračunata na osnovu razlike između izmerene vrednosti i određenog optimalnog nivoa vitamina D3 od 90-100 nmol/L. Kontrolna grupa bolesnika je uzimala svoju uobičajenu terapiju. Istraživanje je trajalo 24 nedelje tokom koje su na drugi mesec praćeni parametri bubrežne funkcije, parametri inflamacije i koštanog metabolizma. Na početku i kraju istraživanja su odreĎeni nivo vitamina D3 u studijskoj grupi, dok su u obe grupe određivani vrednost HbA1c i lipidni profil. Analizom dobijenih podataka je utvrđeno da je zastupljenost deficita vitamina D3 kod bolesnika sa dijabetesnom nefropatijom, uzimajući u obzir sezonske varijacije u nivou ovog vitamina, bila veća od vrednosti od 30-50% koje su postavljene u radnoj hipotezi. Učestalost bolesnika sa nedostakom vitamina D3 je u ispitivanom uzorku je bila 82,56% , dok je normalne vrednosti vitamina D3 imalo 17,43% ispitanika, od toga je bilo 10 (52,63%) muškaraca i 9 (47,36%) žena. Sniženje vrednosti vitamina D3 u odnosu na donje granične vrednosti je bilo izraženije u letnjem periodu i bilo je statistički značajno kod svih ispitanika zajedno, potom u studijskoj grupi, dok je utvrđeno i u kontrolnoj grupi ali je u njoj bilo bez statisičke značajnosti. Utvrđen je porast HbA1c koji je bio veći u kontrolnoj grupi ispitanika. Suplementacija vitaminom D3 je imala povoljan efekat na lipidni profil. Registrovan je porast vrednosti ukupnog holesterola koji je bio izraženiji u kontrolnoj grupi, pad vrednosti triglicerida u grupi bolesnika koji su uzimali

▼ Cystic Fibrosis (CF) is a genetic disorder that primarily affects the lungs and digestive system causing progressive disability and for some early death. The CF gene directs the body’s epithelial cells to produce a defective form of the protein cystic fibrosis transmembrane conductance regulator (CFTR); the epithelial cells cannot regulate the mechanism which allows chloride to pass across the cell membranes. This causes a thick mucus to form inside the lungs, pancreas, and passageways in other organs. The thick mucus clogs the lungs and the pancreatic ducts leading to chronic lung infections and fat malabsorption. Vitamin D, which is a fat soluble vitamin, has become a topic of interest in the CF population due to the increasing number of individuals with low bone mineral density (BMD), osteopenia, and osteoporosis. In CF, vitamin D deficiency may persist early in life and can persist or occur at other times despite supplementation with fat-soluble vitamins, which are given in a water miscible form, and pancreatic enzymes. The Cystic Fibrosis Foundation (CFF) recommends that serum hydroxyvitamin D [25(OH)D] concentrations fall between 30-60 ng/mL to decrease the risk of developing decreased BMD. The goal of this study was to evaluate the effectiveness of different forms of vitamin D supplementation in increasing suboptimal and/or deficient serum 25(OH)D concentrations in individuals with CF. The subjects for this study are being followed at the University of Alabama CF Center for Care, Teaching, and Research at the Children’s Hospital in Birmingham. Results show that there is not a significant change in serum 25(OH)D concentrations before and after vitamin D supplementation. This study also shows that there is no correlation between the subject’s demographic data and their vitamin D data. This study did prove that there needs to be further trials to determine the best method of vitamin D supplementation to use when treating deficient serum 25(OH)D concentrations in those with CF.

▼ A melhoria na maciez da carne bovina através de suplementação de vitamina D3 na dieta tem sido desafiada por relatos de ineficácia do tratamento pré-abate e ainda possíveis impactos negativos no desempenho animal. A vitamina D3 pode ser sintetizada no animal por ação de radiação ultravioleta (UV) da luz solar, atingindo produção máxima em condições de baixa latitude. Este trabalho teve o objetivo de verificar a possível interação da suplementação de vitamina D3 na dieta com a exposição à luz solar dos animais na modificação de variáveis de desempenho e implicações na qualidade de carne e carcaça de bovinos Bos indicus. Foram confinados 41 machos castrados Nelore (µ=411±38 kg) por 45 dias, sendo divididos em 6 tratamentos: T1) Sem suplementação de vitamina D3 (SV) ou sombrite (SS); T2) SV e com sombrite (CS - filtração de 50% de UV); T3) Com 2x106 UI de vitamina D3 (CV2) por 2 dias consecutivos pré-abate + SS; T4) CV2 + CS; T5) CV por 8 dias consecutivos pré-abate (CV8) + SS; e T6) CV8 + CS. Mensurações postmortem foram realizadas no músculo Longissimus dorsi. O delineamento experimental utilizado foi em blocos casualizados com arranjo fatorial 3 (dosagens de vitamina D3) x 2 (condições de exposição à UV). Para as variáveis de desempenho animal nenhum efeito (P>0,05) foi encontrado. Menor espessura de gordura (P=0,09) e peso de carcaça quente (P=0,08) e resfriada (P=0,10) foram verificadas para T6 comparado com T5 (1,8±0,6mm; 240,5±3,0 e 236,6±3,0kg vs 3,4±0,6mm, 251,2±3,2 e 246,1±3,2kg, respectivamente). Concentrações de cálcio ionizado plasmático no início e final da suplementação com vitamina não diferiram (P>0,05) entre os tratamentos. A dosagem CV8 aumentou a fragmentação (P=0,09) em animais SS comparado aos CS (22,3±1,5 vs 18,3±1,5; respectivamente). Entretanto, os animais SS apresentaram menores concentrações de cálcio muscular total (P<0,05) quando comparados aos CS. Nenhum efeito foi verificado em força de cisalhamento, sendo as diferenças observadas (P<0,05) somente para os dias de maturação 1, 7 e 21 (10,4±0,5; 8,8±0,5 e 6,8±0,5 kgf, respectivamente). Os animais CS apresentaram carcaças com menores temperaturas (15,07±0,29ºC; P=0,05) e maiores perdas totais (28,9±0,5%; P=0,06). A dosagem CV8 foi eficiente para aumentar os valores de L* (P=0,065), a* (P=0,02) e b* (P<0,001) comparado à CV2 (32,3±0,5; 17,0±0,4 e 4,5±0,2 vs 30,5±0,5; 15,8±0,4 e 3,5±0,2; respectivamente). Para estes valores, a dosagem CV2 não diferiu (P>0,05) da dosagem SV (31,6±0,5; 15,5±0,4 e 3,3±0,2). Animais SS (34,5±0,5) apresentaram maiores valores (P<0,05) de L* às 24 horas postmortem do que CS (32,6±0,5). Suplementação de vitamina D3 na dieta e exposição solar não afetam desempenho animal e maciez da carne. Vitamina D3 isoladamente pode alterar o padrão de cor da carne. A exposição à luz solar pode também melhorar a luminosidade da carne e interagir com a suplementação de vitamina D3 na definição de fragmentação miofibrilar.

▼ A growing number of patients survive colorectal cancer. Patients often continue to experience health problems that negatively impact their quality of life in the years after treatment. This research aimed to obtain insight in the role of
supplements,
vitamin D, and B-vitamins (status and intake) in relation to quality of life and fatigue in colorectal cancer survivors. Associations were observed between the use of
supplements and increased fatigue, which implies that colorectal cancer survivors may initiate the use of
supplements as a consequence of fatigue. Furthermore, biomarker concentrations of
vitamin D and
vitamin B6 were associated with better quality of life outcomes.
Vitamin D and B6 are therefore promising leads for future studies in this field. Important implications that were drawn from this thesis are the need for attention and alertness among health care professionals about the use of
supplements by colorectal cancer survivors, the need for increased recognition and dialogue about the symptom of fatigue, and more awareness on the prevalence and consequences of
vitamin deficiencies in this population.

▼ Background Iron deficiency anemia (IDA) is a major nutrition related problem in China, especially affecting pregnant women,like in most developing countries. Deficiencies of vitamins also play an important role, such that iron, retinol and riboflavin deficiencies tend to coexist in anemic pregnant women. However,
vitamin and/or mineral
supplements are not routinely used by pregnant women at or below low income levels. Besides being an essential trace element, iron plays a central role in oxygen radical generation, whereas susceptibility during pregnancy is elevated. There is evidence that both iron deficiency and excess may result in free radical damage. Objectives Based on this background, objectives of this thesis were to investigate the current prevalence of anemia among pregnant women in different sites of China, and todescribe the micronutrient status of anemic and non-anemic pregnant women in China. In addition, in anemic pregnant women, the effect of retinol and riboflavin supplementation on top of iron plus folic acid on anemia and changes in hematological status wasassessed. Also oxidative stress and erythrocyte membrane fluidity were evaluated. Finally, we compared the effect of sodium iron ethylenediaminetetraacetate (NaFeEDTA) and ferrous sulfate on hemoglobin (Hb), iron bioavailability and oxidative stress. Subjects and Methods A total of 6413 women in their third trimester of pregnancy were recruited from five rural areas in China (years 2000~2003) for screening anemia or iron deficiency. A random subset was selected for measuring micronutrient status. In three supplementation trials, effects of iron, folic acid, retinol and riboflavin were assessed among anemic pregnant women. Outcomes included hematological status, micronutrient status and parameters of oxidative stress. Samples of fasting blood were collected from subjects before and at the end of the interventions for measurements. Results The overall prevalence of anemia was 58.6%, ranging between 48.1%~70.5% in the five areas. Serum concentrations of micronutrients were significantly lower in anemic women than non-anemic women. After the 2-mo intervention, the increase of Hb concentration in the group, supplemented with iron and folic acid combined with retinol and riboflavin, was 5.4g/L greater than in the group with iron and folic acid only (
p<0.001). The reductions in the prevalence of anemia (Hb<110g/L) and iron deficiency anemia were significantly greater in the groups supplemented with retinol and/or riboflavin than in the iron and folic acidgroup. Riboflavin and/or retinol supplementation significantly improved gastrointestinal symptoms and well-being. In addition, supplementation of iron combined with retinol and riboflavin significantly decreased levels of serum malondialdehyde, and increased activities of glutathione peroxidase and erythrocyte membrane fluidity as well.…

▼ Linear growth retardation (stunting) still has a high prevalence rate in developing countries (ACC/SCN, 2000). In the republic of Benin reported prevalence rates range from 25% to 40%. In malnourished children it is quite common to observe a combination of multiple micronutrient deficiency, loss of appetite and growth retardation. However, possible interactions between these parameters are not yet adequately mapped. The research presented in this thesis was performed to examine whether micronutrient supplementation may improve appetite and growth in young stunted children. We have performed three micronutrient supplementation studies on stunted children in southern Benin and we have measured effects on appetite and growth performance. In order to be able to assess appetite, an appropriate measuring procedure for appetite had to be developed. For measuring appetite in humans there is no standard, but the habitual daily energy intake is usually considered to be the most appropriate proxy for appetite. However, the common methods to assess habitual daily energy intake are quite invasive and time consuming, and therefore perhaps not appropriate for a quick assessment of young children's appetite. To develop an appropriate appetite measurement tool which can be applied in young Beninese children, we have carried out four trials on a total of 109 children, 18-30 months of age (Chapter 3).
Ad libitum intakes of test foods (a maize porridge or rice) served after an overnight fast according to standardized offering procedures were measured on three days. The reproducibility (as coefficient of variation) of the appetite test as calculated from the triplicate measurements was 40% for the maize porridge ('aklui') and 25% for rice ('riz-au-gras'). Habitual breakfast and daily food intake were measured during three consecutive days. Energy intake from the maize porridge was positively and significantly associated with the daily energy intake (n=38, r=0.41, p < 0.05) and with the energy intake from breakfast (r=0.52, p < 0.01). Correlations for the rice test food were less pronounced and non-significant. We conclude that the
ad libitum energy intake from a culturally appropriate and well-accepted food as maize porridge can be considered a valid estimate of appetite, provided a standardized procedure is used. If the appetite test is applied in intervention studies it may be necessary to perform the test in duplicate or triplicate (like we did) to perform statistical tests with sufficient power. The first intervention study was carried out to assess the impact of iron supplementation alone or in combination with a deworming treatment on the growth performance of 3-5 year old children (Chapter 2). ▼ A maciez da carne bovina é o resultado do processo de proteólise miofibrilar influenciado pelas calpaínas (CAPN), enzimas ativadas pelo cálcio. A calpastatina (CAST) constitui um regulador das calpaínas, atuando como substrato e degradando-se pela ação da própria calpaína. A suplementação com vitamina D3 na dieta dos animais tem alterado positivamente a maciez da carne, por obter maior absorção e deposição de cálcio nos músculos. Tendo em vista a importância desses genes para a maciez da carne em bovinos e o metabolismo de vitamina D3, o objetivo deste estudo foi verificar a expressão gênica de 1-HYD, 24-HYD, CAPN1 e CAST (Isoformas). Foram utilizados 42 machos castrados da raça Nelore que foram divididos em 6 tratamentos (7 animais por tratamento). Os animais foram alojados em baias individuais e os tratamentos foram: T1) sem suplementação de Vitamina D3 + sem sombrite; T2) sem suplementação de Vitamina D3 + com sombrite filtração de 50% de UV; T3) com 2x106UI de vitamina D3 por dois dias consecutivos pré-abate + sem sombrite; T4) com 2x106UI de vitamina D3 por dois dias consecutivos pré-abate + com sombrite filtração de 50% de UV; T5) com 2x106UI de vitamina D3 por oito dias consecutivos pré-abate + sem sombrite; 6) com 2x106UI de vitamina D3 por oito dias consecutivos pré-abate + com sombrite filtração de 50% de UV. A expressão gênica foi analisada por PCR quantitativa em tempo real. O gene 1-HYD foi mais expresso nos tratamentos com 2 e 8 dias de suplementação com vitamina D3, independente da exposição diferenciada aos raios ultravioleta. O gene 24-HYD foi mais expresso no tratamento com 8 dias de suplementação pré-abate quando comparado ao tratamento controle, não diferindo do tratamento com suplementação por 2 dias consecutivos pré-abate. Portanto os resultados não corroboram com o mecanismo de regulação das atividades das enzimas modulada de forma oposta para regular os níveis circulantes de 1,25-di-hidroxi-vitamina D3 (1,25 D). Quando a concentração de 1,25 D atinge níveis elevados um mecanismo de regulação inativa a 1,25 D e promove a diminuição da expressão de 1-HYD. Assim pode-se inferir que neste estudo esses fatores não exerceram influência sobre o gene 1-HYD que teve um aumento da expressão. A única possibilidade de verificar o aumento da expressão do gene da enzima 1-HYD parece envolver um hiperparatireoidismo secundário decorrente de hipocalcemia em algum momento do experimento. A suplementação com vitamina D3 não exerceu influência na expressão de RNAm da CAPN1, isoforma I e isoforma total da CAST. A isoforma II do gene da calpastatina foi mais expressa no tratamento com 8 dias de suplementação pré-abate, onde parece que o aumento da expressão é devido a uma sinalização intracelular indicando que a calpastatina está sendo degradada pela ativação prolongada das calpaínas, em decorrência do aumento do influxo de cálcio. As análises de associação apontam para um possível descompasso entre abundância de RNAm e atividade da protease do sistema das calpaínas no processo de amaciamento da carne.

▼ Sammanfattning Bakgrund Vitamin- och mineralbrister hos gravida kvinnor kan leda till missfall och allvarliga störningar i barnets utveckling. Moderns tarmflora överförs med stor sannolikhet till barnet under förlossningen och kan därför innebära ett viktigt steg i utvecklingen av barnets tarmflora. En tänkbar lösning för att säkra ett adekvat intag kan vara konsumtion av kosttillskott och probiotika. I dagsläget finns osäkra uppgifter om hur många gravida kvinnor som intar tillskott. Syfte Att undersöka hur många gravida kvinnor i Västerbottens län som valde att inta kosttillskott, främst järn och probiotika, samt om det fanns en skillnad mellan olika faktorer och intag. Metod En kvantitativ tvärsnittsstudie där gravida kvinnor (n=1473) från Northpop-studien i Västerbottens län svarade på ett frågeformulär gällande intag av kosttillskott och faktorer som ålder, utbildning, kostregim etc. De statistiska tester som användes var Chi-2-test, oberoende t-test och Mann Whitney U-test. Materialet analyserades i SPSS. Signifikansnivån sattes till p<0,05. Resultat Majoriteten av deltagarna svarade att de intog kosttillskott. Faktorer som ökade intaget av kosttillskott hos gravida kvinnor var högre ålder (p=0,030) jämfört med lägre ålder, högre utbildningsnivå (p=0,006) jämfört med lägre utbildningsnivå och vegetarisk/vegansk kost (p=0,021) jämfört med blandkost. Femtiofem procent uppgav att de intog järntillskott. De faktorer som ökade intaget av järntillskott hos gravida kvinnor var vegetarisk/vegansk kost (p=0,001) jämfört med blandkost. Probiotika intogs av 2 procent. Ett högre intag av probiotika sågs hos personer boende i stadsområde (p=0,024) jämfört med övriga boenderegioner samt de som åt vegetarisk/vegansk kost (p=0,001) jämfört med blandkost. Slutsats Majoriteten av deltagarna intog någon typ av kosttillskott, hälften intog järntillskott och en liten andel intog probiotika. Lågutbildade, yngre, de som äter blandkost och bor utanför stadsområde verkar vara i riskgruppen för att inte inta kosttillskott.

▼ The objective of this randomized prospective study was to determine the most
efficacious form of vitamin D supplementation for pediatric patients with Cystic Fibrosis
(CF). We hypothesized that 50,000 IU monthly cholecalciferol would be as effective in
raising serum 25-hyrdroxyvitamin D [25(OH)D] concentrations as routine daily
supplementation of 1000-2000 IU cholecalciferol in pediatric patients with CF, birth to
20 years of age, over a period of 3 months. Data collected at baseline included serum
25(OH)D concentration, gender, genotype, race, age, FEV1, height, weight, BMI,
previous vitamin D supplementation, sunlight exposure, and vitamin D intake from food
and beverage, oral nutritional supplements, and CF fat soluble vitamins. A survey that
included a food frequency questionnaire and questions on time spent in the sunlight
during the weekdays and weekends was used to obtain data on vitamin D intake and
sunlight exposure. Three month follow-up data collected included serum 25(OH)D
concentration, FEV1, height, weight, BMI, and calcium creatinine ratio. Thirty-four
participants were enrolled, and age ranged from four to 20 years of age. Twenty-nine
participants were Caucasian (85%), two were African American (6%), two were Hispanic
(6%), and one was classified other (3%). The mean serum 25(OH)D was 23.5±4.6
ng/mL at baseline. Six participants (38%) in group A and six participants in group B
(33.3%) achieved vitamin D sufficiency, considered serum 25(OH)D levels of ≥30
ng/mL. However, t-tests revealed no significant difference between the treatment groups
regarding serum 25(OH)D at three months. A significant increase in serum 25(OH)D was observed for the sample as a whole, including both groups (p-value = 0.0004). No significant trends were observed for BMI status or FEV1 over the course of the treatment period. Calcium creatinine ratio was not significantly different between groups and the mean ratio for both groups was within normal limits. These results suggest that treatments were equivalent. However, both methods were minimally effective in correcting vitamin D insufficiency, with only 35% of participants achieving sufficient 25(OH)D concentrations. Future research should be conducted using higher dosages of cholecalciferol to determine the best vitamin D supplementation method for pediatric patients with CF and vitamin D insufficiency.

▼ Muitas são as técnicas empregadas para se amaciar a carne. Entre as mais recentes está o uso de vitamina D3, que tem importância na mobilização do cálcio, e é importante na ativação das proteases cálcio-dependentes (m- e m-calpaína). Neste estudo, 36 machos inteiros (Nelore) foram suplementados por via oral com 4 níveis de vitamina (0, 3, 6 e 9 milhões de UI de vitamina D3/animal/dia) por um período de dez dias antes do abate. Após esse período de suplementação, os animais foram abatidos e o amaciamento e perdas por cozimento (aos dias 1, 8 e 15 dias de maturação), análise sensorial, pH, área do olho do lombo, espessura de gordura, rendimentos da carcaça, concentração de minerais no plasma (cálcio, magnésio, fósforo, sódio e potássio) e de cálcio no músculo Longissimus dorsi foram estudados. Os resultados mostraram que, não houveram diferenças significativas (P>0,05) para as principais características da carcaça, glicose plasmática, concentração de minerais no plasma e músculo, perdas por evaporação, e suculência estimada pela análise sensorial. Houve efeito das doses de vitamina D3 e tempo de maturação (P<0,05), sobre as perdas por gotejamento, perdas totais por cozimento, força de cisalhamento e maciez, sabor e avaliação sensorial. Para as perdas por gotejamento e perdas totais, as menores perdas foram aquelas para a dose 6x10 6 UI/an/dia. Para a força de cisalhamento (FC)a dose 0x10 6 UI/an/dia resultou na menor FC encontrada e em relação ao tempo de maturação foi encontrada uma tendência de redução, onde quanto maior o tempo de maturação, menor a força de cisalhamento encontrada. Para as características estudadas na análise sensorial, a dose 3x10 6 UI/an/dia afetou positivamente as características de maciez, sabor e avaliação geral.
Among several techniques to improve beef tenderness, vitamin D3 (important to calcium mobilization) become, recently, to be used to actives the intracellular calcium-dependent proteases (m- and m-calpain). Ten days prior to slaughter 36 intact males were fed with 0, 3, 6 and 9 million IU of supplemental vitamin D3 per head per day. After that period, the animals were slaughtered and tenderness (shear force), cooking losses (1, 8 and 15 days of aging time), sensory evaluation, muscle pH, Longissimus muscle area, fat thickness, carcass yield grade, blood plasma measurements (glucose, calcium, magnesium, sodium and potassium), and muscle mineral levels from the Longissimus dorsi muscle were determined. The results showed that, there were not significant differences (P>0,05) for carcass quant itative and qualitative traits, blood plasma glucose concentration, blood plasma and muscle minerals concentration, evaporation losses, and sensory juiceness. There was effect of vitamin D3 doses and ageing (P <0,05) on drip loss and total cooking loss, shear force, sensory tenderness, flavor and overall palatability.
