▼ Le calebassier (Crescentia alata) ou jicaro, est un arbre très important dans les systèmes agropastoraux des régions tropicales sèches d'Amérique. Ses fruits contiennent de nombreuses graines consommées traditionnellement, mais malgré son importance, peu d’informations existent sur ses propriétés nutritionnelles et son potentiel industriel.Dans un premier temps les caractéristiques physico-chimiques des graines, des cotylédons ainsi que des coques ont été analysées. Le cotylédon résulte contenir en moyenne 43% de protéines et 38 % de lipide (b.s.), ce qui est comparable à la plupart des graines d’oléagineux. La graine ne contient pas d’inhibiteur de trypsine, peu de phytates et pratiquement aucun sucre non digestible. Une analyse protéomique a révélé que les protéines sont principalement de faible poids moléculaire (~10 kDa), plutôt de type albumine 2S contenant comme le soja jusqu’à 16 % d’acides aminées essentiels. Parmi les lipides, 77.6 % sont des acides gras insaturés, en particulier l'acide oléique.S’agissant d’une graine consommée traditionnellement après torréfaction, cette opération unitaire a été étudié. Pour la première fois a été identifié par chromatographie en phase gazeuse olfactométrie (GC-O) un composé d’arôme caractéristique de la graine, l’éthyl-2-méthyl-butyrate dont la teneur augmente au cours de la torréfaction. Néanmoins, d’autres composés d’arôme tels que les pyrazines et certains aldéhydes contribuent aussi aux notes aromatiques spécifiques et agréables qui se révèlent après torréfaction. Cette opération thermique induit des changements physiques et micro-structurales dont la coalescence des globules gras observés par microscopie à balayage et le gonflement (puffing) qui est à l´origine de l’ouverture de la coque. Ce dernier changement a été exploité pour le décorticage de la graine afin de libérer le cotylédon blanc. Cette opération a été optimisée en fonction de la couleur et le nombre de graines ouvertes avec un modelage cinétique, obtenant un taux d’ouverture de plus de 90% avec une perte de luminance de moins de 10%. Après la torréfaction, un traitement de ré-humidification a été effectué pour durcir le cotylédon et obtenir une meilleure efficacité de décorticage.Les cotylédons ainsi libérés peuvent utilisés pour la fabrication d’un lait végétal qui présente des caractéristiques physico-chimiques, sensorielles et nutritionnelles supérieures à de nombreux laits végétaux présents sur le marché. Une analyse préliminaire a montré que le lait contient plus de 6% de lipides et 4% de protéines et maintient le couleur blanc des cotylédons et l’arôme caractéristique du jicaro. Des études cliniques ont aussi révélé que le lait obtenu a un indice glycémique bas (11). Cela vient confirmer son potentiel comme alternative bon pour la santé, s’agissant d’un lait sans lactose, sans facteurs anti-nutritionnels et avec un indice glycémique bas.

▼ Dieting and non-dieting are two contrasting approaches to the management of overweight/obesity, but less is known about why people follow non-dieting approaches and how these approaches are associated with health and nutrition status indicators. This thesis enables a greater understanding of why dieting and non-dieting approaches are adopted and provides insight into whether one approach is more favourably associated with nutrition and health status indicators. The findings of this thesis will be useful for clinicians who wish to encourage dieting or non-dieting approaches in their clients and for researchers wishing to understand how best to address overweight and obesity.

▼ Namen raziskave je bil ugotoviti, ali je celodnevna prehrana pri predšolskih otrocih iz waldorfskega in javnega vrtca uravnotežena oz. če so vključene različne vrste živil iz skupin: žit in škrobnih živil, sadja in zelenjave, mesa in zamenjav, mleka in mlečnih izdelkov, maščob in maščobnih živil. V letu 2017 smo pri posameznem otroku v omenjenih vrtcih 15 dni tehtali celodnevno količino zaužitih živil/jedi, starši/skrbniki pa so to doma izvajali preko prehranskih dnevnikov. Dobljene podatke smo analizirali z OPKP (Odprta platforma za klinično prehrano) in statistično obdelali z Microsoft Excel 2010 in IBM SPSS 20 ter primerjali s prehranskimi priporočili D-A-CH (Nemčija (D), Avstrija (A), Švica (CH)) za starostno obdobje od 4 do 6 let. Ugotovili smo, da predšolski otroci niso zaužili priporočenega vnosa mesa in zamenjav, so pa predšolski otroci iz waldorfskega vrtca zaužili priporočeno količino sadja. Priporočenemu dnevnemu vnosu zelenjave se ni približal noben vrtec, medtem ko sta oba zadostila priporočilom pri vnosu mleka in mlečnih izdelkov. Skrb zbujajoč je dnevni vnos zaužite soli pri posameznem otroku, ki presega optimalne vrednosti za 4-krat od priporočenih. V dnevne obroke bo treba vključiti več mesa, zelenjave in sadja ter znižati prekomeren vnos soli, ki negativno vpliva na zdravje otrok.
The main purpose of the study was to determine if the daily diet of Waldorf and public nurseries is balanced and if the following different types of food are included: cereals and starch foods, fruits and vegetables, meat and meat substitutes, milk and dairy products, fats and fatty food. In 2017, we weighed the daily consumed food for each child in both nurseries for 15 days, while the parents/guardians were doing this at home and documented it in a diary. We analyzed the obtained data with OPKP (Open Platforfm for Clinical Nutrition) and statistically processed it with Microsoft Excel 2010 and IBM SPSS 20. We compare the results with the dietary recommendations of the D-A-CH (Germany (D), Austria (A), Switzerland (CH)) for the age period of 4 to 6 year-olds. The final results indicate that children from both nurseries did not consume the recommended intake of meat, meat substitutes and vegetables, but they did eat enough of the recommended amount of milk and dairy products. Children from waldorf nursery consume the recommended amount of fruit. The daily intake of salt per child is alarming, because it exceeds the recommended amount by 4 times. It is important to include more meat, vegetables and fruits in the daily meals and to reduce excessive salt intake, which has a negative impact on children's health.

▼ During adolescence, the nutritional needs are higher than at any other time in the
lifecycle. Childhood food practices persist into late adolescence and children's
food preferences predict their food consumption patterns. Therefore, it is
important to understand what influences their preferences and how they change
over time.
The main objective of this part of the THUSA BANA study was to investigate the
eating habits of children aged 10-15 years in the North West Province (NWP). A
cross-sectional design was used to investigate the eating habits of the children. A
single, random sample, stratified for gender (male/female) and ethnic group
(black, white, coloured, Indian) was drawn from schools (primary/secondary) in the
five regions in the NWP. Dietary intake data (24-h recall method) were used to
evaluate the adequacy of nutrient intakes, while frequencies and mean quantities
of food intakes and an eating habits questionnaire were used to establish patterns
of intake to identify dietary practices.
Overall the diets of children 10-15 years of age were deficient in various
micronutrients. The RD/Al's were not met for vitamin A, C, E, folate, pantothenic
acid, biotin, calcium, magnesium, zinc and copper. The intake of fibre was low.
Girls skipped breakfast more often than boys and children from informal
settlements skipped breakfast more often than children from rural and urban
areas. A significantly lower BMI was found for the children having breakfast
when observing all the children, but not for different age and gender groups. The
reason given most for skipping breakfast was not being hungry in the morning, but
food availability which may have also played a role. The skipping of breakfast
was associated with a lower diet quality. A low intake of fruit and vegetables and
high intake of snacks were apparent. The intake of snacks, such as chips,
cheese curls and sweets were reported more frequently than fruit or vegetables.
Small milk portions and large portions of cold drink were reported, suggesting that
cold drink is replacing milk in the diet. Overweight children consumed smaller
portions of milk, though no correlation between calcium intake and BMI was
found. Overweight boys consumed more carbonated cold drink and overweight
girls consumed more squash, showing cold drink intake may be positively related
to overweight. The snacks consumed were not nutrient dense and were
consumed very regularly. The high intake of snacks may contribute to the low
micronutrient and fibre intake. The importance of fruit, vegetables, milk, breakfast
and high nutrient dense snacks needs to be emphasized with both the children and their parents.

Diseases affecting the oral cavity are the most prevalent chronic conditions in the world, and affect all ages, sexes, and nationalities. Diet is a strong predictor of oral health, and beverage consumption may affect oral health outcomes; however, there has been relatively little research on the association between the balance of beverages in the diet and oral health outcomes.
Methods:
The current study used data from the Canadian Health Measures Survey (CHMS) to determine the impact of the type and frequency of beverage consumption on oral health, as well as the interaction between beverages. The first round of data collection for the CHMS took place between March 1, 2007 and March 31, 2009, and involved 5604 Canadians between the ages of 6 and 79 from across Canada. The sample targeted individuals in privately occupied dwellings, and is representative of 97% of the Canadian population. The CHMS consisted of two components: a household questionnaire to collect sociodemographic information, health history, and information on personal habits, and a clinical examination to collect anthropometric measures, blood and urine samples, and oral health measures. For our current analysis, age was restricted to age 12-30 inclusive, with 16 participants removed for missing responses giving a final sample size of 1534.
The current analysis examined a number of different types of beverages, including water, milk, regular soft drinks, diet soft drinks, fruit juices, fruit-flavoured drinks, vegetable juices, sport drinks, and alcohol; and four oral health outcomes: dental decay, periodontal health, self-rated oral health (SROH), and a general oral health index (OHX). Descriptive tests and Poisson and Ordinal Regression were used to determine whether an association existed between the variables of interest, and if so, the magnitude of this association. Four models, each consisting of three sub-models, were fitted in order to address the hypotheses and research questions. Due to the complex sampling nature of the CHMS, survey weights were used as outlined by Statistics Canada, and clustering and bootstrapped analyses were carried out in order to account for the complex nature of the data.
Results:
A number of the beverage variables, as well as other covariates, were associated with oral health outcomes. Soft drink consumption was associated with all of the oral health outcomes in the main effects models with increased soft drink consumption having a detrimental effect on oral health. Fruit-flavoured beverage consumption was significant with a negative impact in the dental decay main effects model, and water consumption was significant for the SROH main effects model, having a positive effect on SROH as the frequency of water consumption increased. Milk was significant and beneficial in all index models, and the milk and sugary- or acidic-beverage interaction variables were significant in all index models except for the sugary index model for dental decay. ▼ Global dairy producers are moving steadily towards producing differentiated products aimed at niche markets with greater emphasis on maximising resource utilisation and meeting consumer preferences. Consequently, fat-filled milk powders (FMP) are produced by partial or whole replacement of milk fat with vegetable oils to increase the sales of underutilised skimmed milk powders (SMP), while cows with specialised characteristics and requirements may be aggregated into different herds for targeted nutritional management to reduce the milk fatty acids (FA) that are often associated with negative health effects, offering improved economic returns. Rapid methods are therefore desirable for independent verification of product quality and origin for validation and traceability of such products. We explore the use of near infrared spectroscopy (NIRS), combined with chemometrics and diverse modelling strategies, for this purpose. This study was carried out in five stages: i) the segregation of freeze-dried raw milk samples from individual cows from different herds under the same or differing feeding regimes; ii) the formulation of model FMP types according to differing protocols that reflect the differing fat sources (i.e., coconut (CO), palm (PO), soya bean (SBO) and sunflower (SFO)) used in their manufacture; iii) the adulteration of model FMP types with differing concentrations of chemical adulterants such as melamine and urea; iv) the accelerated storage of model FMP types for 7 weeks at 40°C and 90 % RH; and v) the validation of the applicability of all the models developed for model FMP types using commercial samples covering 7 FMP brands collected from Nigerian markets.
We found that NIRS can reliably segregate freeze-dried raw milk from individual cows/herds for product innovation, providing quality assurance and traceability benefits, but may not be adequate in correlating their FA profiles in accordance with the Beer’s law. The replacement of milk fat with PO, SBO and SFO resulted in FMP that were less atherogenic than whole milk powder (WMP). The PO FMP had spectral profiles and lipid indices closest to WMP but SBO and SFO FMP types offered the best indices that may support arterial health. Chemometric models developed with the NIR spectral profiles, particularly the PLS-DA models provided substantive differentiation (i.e., zero false negative and positive values with mean efficiency of 100 %) among the model FMP products. The adulteration of the model FMP types with different concentrations (i.e., 0.01 to 16.00 %) of melamine and urea resulted in some compositional alterations in the sample matrices. The NIRS profiles of CO and PO FMP types highlighted that CO had high specificity for the chemical adulterants while PO appeared to have contrasting abilities and masking their presence. The SIMCA multilevel models developed using the hierarchical modelling strategies were able to detect, confirm and differentiate the adulterations with an efficiency ranging from 89.8 to 100.0 %. ▼ The amount of bone accrued during adolescence is an important determinant of later osteoporosis risk. I examined the role of adolescent dietary patterns (DPs) and food group intakes on the adult bone acquisition, and assessed the stability of DPs over time using the data from Saskatchewan Pediatric Bone Mineral Accrual Study (1991-2011).
Principal component analysis was used to derive adolescent DPs including “Vegetarian- style”, “Western-like”, “High-fat, high-protein”, “Mixed” and “Snack” DPs. Associations between adolescent DPs and adolescent (age 12.7±2 years, n=125) or adult (age 28.2±3 years, n=115) bone mineral content (BMC) and areal bone mineral density (aBMD) were analyzed while adjusting for covariates. Mean adolescent total body aBMD and young adult total body BMC and aBMD and femoral neck BMC and aBMD were 5, 8.5, 6, 10.6 and 9% higher (P<0.05), respectively, in third quartile of “Vegetarian-style” DP compared to first quartile.
Associations between adolescents’ intake of
milk and alternatives (M&A) or fruit and vegetables (F&V) and adult bone structure and strength at tibia and radius were also investigated. Females with high M&A intake compared to low M&A intake group (mean 4 vs. 1.5 servings/d, respectively) had 14, 15 and 16% greater (P<0.05) adult ToA, CoA and CoC at radius shaft, respectively. Females with moderate F&V intake compared to low F&V intake group (mean 4 vs. 2 servings/d, respectively) had greater adult ToA (8.5%, P<0.05) at distal tibia.
The stability of DPs from childhood to adulthood were assessed by generalized estimating equations using the energy-adjusted applied DP scores. I found a moderate tracking for the “Vegetarian-style” (ß=0.44, P<0.001) and “High-fat, high-protein” (ß=0.39, P<0.001) DPs in females and “Vegetarian-style” DP (ß=0.30, P<0.001) in males; and a poor-to-fair tracking for remaining DPs, in both sexes. The “Western-like” DP was not stable in females. Adherence to “Vegetarian-style” DP increased and adherence to “High-fat, high-protein” DP decreased by age.
Higher adherence to “Vegetarian style” DP (in both sex) and higher intake of M&A or F&V (only in females) during adolescence was positively associated with bone health. Healthy dietary habits established during childhood and adolescence could moderately continue into adulthood.
