This paper presents a study of an industry of large sugar-alcohol sector. The aim of this study was to find the perception of managers on the process of ISO 14001certification and its impacts on environmental management practices. This is a qualitative research through a case study, the instruments for data collection was to document analysis and semi-structured interview. The interviews were conducted individually whit 13 managers who work in various sectors of the organization, but correlated to the environmental management system. Aiming to support the concepts and information in the development of research, has taken up the theoretical basis from literature and semi- structured. Through interviews generated by the graphic analysis of speeches, it was shown that there is a bi commitment, involvement and concern of managers of the practices that improve the management of environmental performance of industry. It was also observed that the management of environmental impacts of providing environmental, social and economic, as management, seeks to address problems related to environment, from in the production and consumption of goods that generate physical contamination and/or negatives externalities, an therefore benefits society, it generate economic benefits with increased profits, reduced costs and increased competitiveness. Seis linhagens de Aspergillus flavo furcatis foram selecionadas para investigar a produ??o de proteases coagulantes por fermenta??o em meio l?quido natural. O meio de cultura consistiu de extratos de Casca de Cupua?u+Farelo de Arroz [CC+FA 10% ou 20% (v/v)] e Res?duo de A?a?+Farelo de Arroz [RA+FA 10% ou 20% (v/v)] com ou sem suplementa??o de extrato de levedura 0,1% (p/v) e gelatina 0,5% (p/v). Valores significativos de atividade coagulante foram determinados por A. flavo furcatis DPUA 1461 e DPUA 1608 no meio padr?o e natural, respectivamente. De acordo com o crit?rio de forma??o de co?gulo e separa??o de soro, 8,3% das amostras testadas foram classificadas como coagula??o forte, 41,70% apresentaram coagula??o fraca e em 50% n?o foi observada a coagula??o do leite. As proteases coagulantes de A. flavo furcatis DPUA 1608 foram inibidas por pepstatina (94,72%) e moderadamente inibidas por outros ?ons met?licos testados. A a??o ?tima das enzimas foi determinada a 40 ?C e pH 7,0

Six strains of Aspergillus flavo furcatis were screened to investigate milk-clotting enzyme production by fermentation in natural liquid medium. The growth media comprised extracts of Cupua?u Exocarp+Rice Bran [10% or 20% (v/v) CE+RB] and A?ai Waste+Rice Bran [10% or 20% (v/v) AW+RB] with or without supplementation 0.1% (w/v) of yeast extract and 0.5% (w/v) gelatin. Significant values of milk-clotting activity were determined by A. flavo furcatis DPUA 1461 and DPUA 1608, in the standard and natural media, respectively. According to criteria of clot and whey formations, 8.3% of the samples tested were classified as strong coagulation, 41.70% showed weak coagulation and in 50% wasn?t observed milk coagulation. Milk-clotting proteases of A. flavo furcatis DPUA 1608 were inhibited by pepstatin (94.72%) and moderately inhibited by the others metal ions tested. The optimal action was at 40 ?C and pH 7.0.
