The gourmet bakeries are establishments with sophisticated design, high and diverse range of products and refined service. The object of this research work, is studying the type of their customer looking for this products and services, also marketing strategy, due to the increase growing, especially in the center of the country, of the gourmet bakeries. To this project was made a literature review of the subject and two questionnaires (both via on-line). One of them was directed to consumers, which containing 119 responses, treated by Statistica software, using the chi-square test. In conclusion, the consumer of gourmet products depends of age level, literary qualifications and the household income. The consumers also describe gourmet products as owners of high quality and traditional component. The second questionnaire was made to managers of these organizations to verify the efficiency of their marketing plan. In conclusion, this differential strategy present in product, price, promotion and place satisfies the demand of these food products.

Growing community concern about food safety led to define more demanding and uniform normative standards, such as International Food Standard and British Retail Consortium, allowing access of the food business to new markets. This work consisted in the review of the prerequisite “management of glasses, plastics and acrylics” for DanCake Company located in Povoa de Santa Iria, being this a requirement of the normative standards mentioned above. Therefore, all the registration of plastics, glasses and acrylics existences, within the equipments of each production line, were reviewed and completed with a risk analysis. Subsequently, the conformity of all the points covered by this prerequisite was validated, having proceeded to updates, implementation of procedures to improve the control system, as well. The identification, quantification and location of these materials in the respective register system, risk analysis and verification of conformity of all identified components are essential to the effectiveness of the control system, since these are materials can only be identifiable by visual inspection. However, the cooperation of all the staff is essential, for a food safety system to be effective given the complexity of this prerequisite in the respective company.

This work consists in the adaptation of a HACCP System (Hazard Analysis and Critical Control Points), present in a pre-cooked and frozen industry, more specifically in the manufacturing process of patties, cheese and ham rolls, pears and tender dough pastel, to the ISO 22000:2005 requirements. The work carried out was based on an internship at Socimbal Company, where it was possible to run multiple functions and observe all the productive activity of the company, crucial to acquire an overview of the process and, together with the experience of managers and employees, make an assessment more sensible and conscientious. Based in these knowledge and experience the flowchart of manufacturing, hazard analysis, preventive and corrective actions of raw materials and production steps were reviewed, as well the Critical Control Points Program and Pre-Operational requirements were defined. Thus, we obtained the HACCP system adapted to the requirements of ISO 22000; the food safety increased and the analysis of the production system and its control process were simplified.
